Ingredients
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 cup all-purpose flour
1/2 cup cornstarch
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika (optional, for color and flavor)
Salt and pepper to taste
2 large eggs
1-2 cups vegetable oil (for frying)
Instructions
Prepare Coating: In a shallow bowl, combine flour, cornstarch, garlic powder, onion powder, paprika, salt, and pepper.
Beat the Eggs: In another bowl, beat the eggs.
Coat the Chicken: Dip each chicken piece into the egg, allowing any excess to drip off, then coat it thoroughly in the flour mixture. Repeat for all chicken pieces.
Heat Oil: Heat oil in a deep skillet or frying pan over medium heat until it reaches about 350°F (175°C).
Fry the Chicken: Carefully add a few pieces of chicken to the hot oil, making sure not to overcrowd the pan. Fry each side for 3-4 minutes, or until golden and crispy. Remove and place on a paper towel-lined plate to drain excess oil.
Serve: Serve warm with your favorite dipping sauces, like honey mustard, ranch, or BBQ sauce.
